No-Bake Protein Bars with Chickpeas & Chocolate
These high-protein, nutrient-dense bars are easy to make, gluten-free, and packed with fiber, healthy fats, and plant-based protein. You can switch up the nut butter for variety!
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
½ cup nut or seed butter (peanut, almond, cashew, sunflower seed, etc.)
1 cup melted chocolate chips (dark, semi-sweet, or dairy-free)
1 teaspoon vanilla extract (optional)
¼ teaspoon sea salt
For the Chocolate Coating & Topping:
1 cup melted chocolate chips
1 tablespoon chia seeds
1 tablespoon hemp seeds
2 tablespoons chopped nuts (almonds, pecans, walnuts)
Instructions:
Step 1: Blend the Base
In a food processor, combine chickpeas, nut butter, melted chocolate, vanilla extract, and salt.
Blend until smooth and creamy.
Step 2: Press & Freeze
3. Line a small cookie sheet or 8x8-inch pan with parchment paper.
4. Press the mixture evenly into the pan.
5. Freeze for 10-15 minutes until firm.
Step 3: Melt & Coat with Chocolate
6. Melt 1 cup chocolate chips in the microwave or a double boiler.
7. Cut the frozen mixture into small bars.
8. Dip each bar into the melted chocolate and place on parchment paper.
9. Sprinkle chia seeds, hemp seeds, and chopped nuts on top.
Step 4: Final Freeze & Enjoy!
10. Place back in the freezer for 5-10 minutes to set the chocolate.
11. Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.
