Shrimp Ceviche
Gluten-Free, Dairy-Free Shrimp Ceviche
Ingredients:
1 lb fresh shrimp, peeled and deveined
1 cup fresh lime juice (about 8-10 limes)
1/2 cup fresh lemon juice (about 3-4 lemons)
1/2 red onion, finely chopped
1 medium tomato, diced
1 cucumber, diced
1 jalapeño, seeded and finely chopped (optional for heat)
1/2 cup fresh cilantro, chopped
1 avocado, diced
Salt to taste
Pepper to taste
Instructions:
Prepare the Shrimp:
If using raw shrimp, cut them into small pieces and place them in a glass or stainless steel bowl.
Pour the lime and lemon juice over the shrimp, making sure they are fully submerged. Cover and refrigerate for about 30 minutes to 1 hour, until the shrimp turn opaque and are fully "cooked" by the citrus juices.
Mix in Vegetables and Herbs:
Once the shrimp are ready, drain some of the excess citrus juice, leaving just enough to keep the shrimp moist.
Add the finely chopped red onion, diced tomato, diced cucumber, finely chopped jalapeño, and chopped cilantro to the bowl. Mix well.
Season and Serve:
Season with salt and pepper to taste.
Gently fold in the diced avocado just before serving.
Serve chilled, with gluten-free tortilla chips, on lettuce leaves, or as a topping for gluten-free tostadas.
