Shrimp Ceviche

Gluten-Free, Dairy-Free Shrimp Ceviche

Ingredients:

  • 1 lb fresh shrimp, peeled and deveined

  • 1 cup fresh lime juice (about 8-10 limes)

  • 1/2 cup fresh lemon juice (about 3-4 lemons)

  • 1/2 red onion, finely chopped

  • 1 medium tomato, diced

  • 1 cucumber, diced

  • 1 jalapeño, seeded and finely chopped (optional for heat)

  • 1/2 cup fresh cilantro, chopped

  • 1 avocado, diced

  • Salt to taste

  • Pepper to taste

Instructions:

  1. Prepare the Shrimp:

    • If using raw shrimp, cut them into small pieces and place them in a glass or stainless steel bowl.

    • Pour the lime and lemon juice over the shrimp, making sure they are fully submerged. Cover and refrigerate for about 30 minutes to 1 hour, until the shrimp turn opaque and are fully "cooked" by the citrus juices.

  2. Mix in Vegetables and Herbs:

    • Once the shrimp are ready, drain some of the excess citrus juice, leaving just enough to keep the shrimp moist.

    • Add the finely chopped red onion, diced tomato, diced cucumber, finely chopped jalapeño, and chopped cilantro to the bowl. Mix well.

  3. Season and Serve:

    • Season with salt and pepper to taste.

    • Gently fold in the diced avocado just before serving.

    • Serve chilled, with gluten-free tortilla chips, on lettuce leaves, or as a topping for gluten-free tostadas.
